Pulling the heads off is easy.

I'm gonna stick with scissors for the quail & hatchet for ducks/chickens.

I usually clothes pin them to the fence to bleed out. Gets messy otherwise. Clothes pin them to a 5 gallon bucket also works. Put some wood chips in the bottom for fertilizer if you aren't collecting the blood for something.

You can make a kill cone out of a 1 liter coke bottle, too.

For the scissors, I like the ones with the bone notch.
