Thank you!! I thought it was :D my parents apparently did too cause they both had second helpings haha I think it turned out pretty good for not having made anything like it before or really cooking much at all.

Your dinner looks fantastic!
We had Culver's (burgers) for dinner. We'r were not intending to eat out, but DS, who is just 2, was running around the house and fell right into a corner piece of baseboard trim. It split his forehead right open. I was at work and had to rush to meet DW and DS at the ER. 3 stitches later it wad time to relax and get some happy food - Culver's is DW's favorite and DS got to have chicken tenders, which he never refuses.
 
i started baking fruit cobblers for dessert recently from a recipe that I found over 20 years ago!! it’s really fairly simple.....1c flour, 1c sugar, 1c milk, 1 stick butter, 1 can fruit or pie filling. last week I did peach....tonight I did strawberry!!! the peach was good, but I think the strawberry was better! not sure, but possibly because my son made “clarified butter” and gave me the “brown butter” to add to the cobbler........
You should try mixing the peach and strawberry in the same cobbler. I know that peach berry cobbler is awesome especially if the berries are black raspberries.

My eggs are hatching early. Literally walked by the bator this morning and heard crying. 3 out so far. I checked it 30 or 40 minutes before and there weren't any pips. Then bam one baby out running around crying. She has perfect legs and feet too!
One has been pipped since like 11am Pacific...had a few with flipped air cells when we candled at lockdown. I'm thinking these few guys started developing during shipping? I'll probably wake up in the morning to 50 chicks!

But we got 3 of the shishito peppers today which are sweet but like an Asian pepper I think so was thinking they might be good for stir fry or something but none were ready until today all of a sudden there were 3 haha

And we have tons of green beans. Seriously soooo many. Idk if those would be good in a stir fry or not? But I gotta do something with them. Maybe at least steam them. Or can you can green beans???

Also have tons of jalapeños on the verge of going bad cause we haven’t used them yet and they’ve been in there a while. Idk if I’ll put those in it or not but gotta do something with those too.

Anyway, I also just bought chicken today in case I wanted to make chicken parm too in addition to the eggplant parm but decided on just the eggplant. But so now I’ve got a ton of chicken, an entire huge pack, it was on sale, so I might cook that with the Asian peppers? Not the whole pack probably but some of it at least.

Have a poop ton of cucumbers too haha but I don’t think those would be good in a stir fry. Thinking of making pickles with them.

But idk if I’m gonna do that tomorrow or Sunday. It sounds stupid but I’m not used to doing very much and even cooking something simple takes me hours so I can’t really both can and make dinner. Unless I get up earlier. Idk. But I’m thinking the canning will be an all day thing anyway because we have sooo many cucumbers and I might try to dry some seeds from the huge one we have too.

I might just try to do laundry and cleaning and stuff tomorrow and cook another dinner then do the canning Sunday.

I definitely want to cook again and we gotta use up all the veggies we have before they all go bad haha just picked the cucumbers today so they’ll be fine until Sunday.

That sounds delicious. I love berry pies mixed together like blackberry, raspberry, strawberry, and/or blueberry, etc together. Those are good. :drool

You can absolutely stir-fry green beans!
Make the sauce in advance: equal parts shoyu, sake, mirin, and sugar, stirred until sugar is dissolved. I usually do about 1 tsp each.

Heat your oil (sesame oil is best for flavor), add some garlic when the oil gets hot, stir just long enough to get fragrant, then add your green beans. Add some peppers if you like. Add your sauce gradually to coat the green beans. You may need to add a bit of water to steam them, but you shouldn't have any water left when you're done, just a nice bit of teriyaki glaze.

Serve over rice.

Edit: shoyu - soy sauce That's one of the words I grew up with in Japanese and never got comfortable with the English word.
