I don't know about this technique for me, I don't think I could do it. I prefer the hatchet method.....easy peasy.

The pithing method when done properly makes it easy to dry pluck the carcass.

I can see the benefit in that after processing one of my drakes & huge cockerels!!! I just skinned them both!

Huge gizzard is what I recall!!! I don't know why but I hate cutting off their feet!!! Need an axe for those ankles!!!
