The quail pens I built will only hold 48 if I go with 1sqft per bird. So my addiction will be limited to that number.

You just wait and see. Other pens can be easily built.
I started with a wynola cage and built a 4 unit condo so I’m at 5 now. Yep all within 6 months

I just don't think I can eat that many quail. There's only so many recipes out there.

That would add up to A LOT of 3’x4’ cages if I want to keep 48 bird's max. I'll have four 3’x4’ cages, I'll let the quail tell me how many should be in there. I won't know till they hatch how many of what I have. Zach said he was sending Wild, White Wing, White and Egyptian. Who knows what I'll end up with.
