After nearly three years I find out my rooster is a hen! (Questions and concerns!)

I had a Silkie who I was SURE was a cockerel until she laid an egg, but she was only about 6 months old when we figured it out. You totally have me beat!
I really should have realized sooner, with how many eggs we would get.
Some days I would get three eggs in one day, I assumed my Cochin (she lays white eggs too) was a hard working lady, and was laying two eggs some days. I read that Cochins only lay 2-3 eggs a week, but I just thought she was an excellent layer 😂

We all learned these things at some point along the way! And her coloring and spiky looking hairdo would have me guessing, too.
 
She is a male feathered hen, likely due to hormone issues, she laid an egg so that means the bird in question is a female

i just assumed polish chickens could come in unbearded and bearded varieties, similar to silkie chickens

Beards can be on both male and female (one of my Polish pullets has a big ol beard). The male feathers are specific feathers only males get, like saddle and hackle feathers. Chickens can also be hermaphroditic. But yours is def female.
 
You may have eaten that egg by now, but when one of my girls got bumblefoot, the vet told me to toss any eggs she laid. Once she was off the antibiotics, the eggs were fine to eat.
