Got it. I still consider this a success (it's the first time I dared deviate from a recipe for bread). It had a hint of sour, the extra nutty flavor of the spelt, a nice big irregular holey crumb that was very creamy and a delicious crunchy crust. Oh and the one I shaped using spelt was a bit darker, crunchier and nuttier crust.

ETA: The instructor suggested using semolina for shaping for an alternative flavor and texture.

Currently, it's just cakes and other simple stuff, but I want to bake bread and that's why I bought the book by Claus Meyer and have been reading it. I just haven't had the time to actually test out the recipes yet. I bought some stuff from the grocery store yesterday to prepare to actually start baking the bread recipes.

Baking bread is fun, one of my favorite things to make in the kitchen! There are several here that work with bread dough so if you have any questions, just post. Best of luck to you!
