Haven't been on for a while. Been busy packing for a move. How is everyone?

@Aria I don't know what I missed, but I am glad all is well with the test results being mentioned. I hope all continues to go well for you.

I grilled oysters on the half shell. They were pretty good!

They obviously don't care about selling them to people my height (I'm 5'3"). I'll let the taller folks have them and I'll stick with my old-fashioned side by side models (with the minimum settings). Those are cheaper to buy and I can read/reach all the controls! :lol:

We had a super simple dinner tonight. I was so exhausted from shoveling. I figured I'd better get a little more if the driveway done before we get the freezing rain tomorrow :/ We had ground turkey cooked with garlic and onion powder and then a box of Mac and cheese added to it. Basically makes that hamburger helper cheeseburger macaroni. Then corn on the side. Very quick, easy, and yummy in a pinch.

Pickling recipe for beets/eggs

12 large eggs (2-3 wk old) hard boiled/peeled
8 medium fresh red beets
1 1/2 cups sugar
3 cups vinegar (we used apple cider vinegar)
3 cups water
2 tsp salt
2 tsp whole cloves
2 tsp whole allspice
2 cinnamon sticks
1 medium onion (quartered)

Combine and boil everything except the eggs, onion and beets.
Simmer for 10 min. Remove from heat and cool.

Boil the wash fresh beets for 15-20 min. Drain, peel and cut.
Arrange beets, onions and eggs in a jar then pour the set aside liquid in. Cover and cool.
Refrigerate for 2-3 wks before use for better flavor.

We sometimes add fresh garlic and green pepper.
