63 cloudy 89% humidity feels like 62 rain 8%.

Sounds like everyone has a good handle on fixing Thanksgiving Dinner.

39 degrees. NO SUN...no wind. I have two Loaves of Sourdough
rising....to share with neighbors. To add to their Thanksgiving Dinner..made the Sandwich...Loaves...ready for Turkey Sandwiches.
 
I can't use canned cream soup, as they're thickened with wheat flour, and I'm GF. When I need some kind of cream soup, I make my own, using bone broth and thickening it with cornstarch. I haven't found a recipe that that doesn't work well in, flavor-wise.
There is a cream of anything recipe in the index. It is gluten free.

Homemade Condensed, Cream of "Anything" Soup.

Author: This Old Gal Recipe type: Condiment Cuisine: American Serves: 10 oz

Ingredients

1 cup Cold Milk
2 Tablespoons Cornstarch 1½ Tablespoons Butter
1 teaspoon Chicken Bouillon (or any flavor you like)
½ teaspoon Sea Salt Dash of pepper

Instructions

In a small saucepan, whisk milk and cornstarch until well blended.
Stir in butter, bouillon, salt, and pepper.
Heat to a boil, stirring frequently.
Simmer on low for one minute more to thicken.

Notes
Use in recipes to replace one can of condensed cream of soup. Add in chopped fried mushrooms or celery for different versions of condensed cream of soup.

When I make my dressing I use the following:

Thanksgiving Dressing

Turkey broth
Onion, diced
Celery, diced
Pepperidge Farms cornbread mix
Pepperidge Farms bread mix
Sage
Salt Pepper

I mix all the ingredients together.

I taste it to make sure the taste is where I want it.

Place it in a baking dish.

Bake at 350 degrees until browned.

Peanut butter oatmeal chocolate chip cookie in milk.

Ingredients:
1 cup creamy peanut butter
3/4 cup brown sugar ( I am sugar conscious so I use 1/2 cup instead of 3/4 cup and we think they still taste great.
1 egg ( I like it beaten )
3/4 cup oatmeal ( I use quick oats )
1 tsp vanilla
1/2 cup semi-sweet chocolate chips ( I usually add more, amount depends on my mood at the time ).

Instructions:
-Preheat oven to 350 degrees.
-Line a baking sheet with parchment paper.
-Add all ingredients except the chocolate chips to a mixing bowl. -Thoroughly combine.
-Stir in the choclate chips.
-Form cookie dough into ball. ( golf ball size works well for me ). Place on prepared pan and slightly flatten the dough balls. Bake for 10-12 minutes or until just beginning to turn golden.

Additional notes: My elevation is 650 feet, 10 minutes of baking is perfect for us here. It is easy to get them too dry by over baking.
If I bake them for 12 minutes they are much too dry for our preference.

What is up with vermicelli?!?! I've been to 4 stores, and NOBODY had ANY! :mad::duc

I am very glad I bought 6 boxes the last time I saw some. I'm wishing I'd bought all they had!

Anyway. I have the stuffing baking right now. I guess it's not a good idea to bake it in the bird anymore. It won't fit in the oven with the roaster pan, unfortunately. I'll have to reheat some tomorrow. Gah. Another last minute thing on the stove top.

No, I don't have a microwave. :hmm
