I had someone approach me to harvest their citrus before the freeze a month ago. I landscape for a living and it was basically come get them so they don't go to waste. Well 4 crates of honey bells and two of tangelos later I have made orange bread, poke cake, upside down cake, custard pie. I have a few (dozens) left and yes I am eating them plain and froze a few. Anyone have any favorite orange recipe that makes the oranges shine? I hate the recipes full of jello and hardly any real orange. I think the upside down cake was the favorite.

MANDARIN ORANGE CAKE
1 yellow cake mix
2 eggs
1/4 cup canola oil1 can pineapple, crushed, with juice
1 can mandarin oranges, with juice
Mix cake mix with pineapple and juice, eggs, and oil.
When completely mixed add mandarin oranges with juice and fold in gently.
Bake at 350F. for 30 to 35 minutes.
MANDARIN ORANGE FROSTING
1 (12 oz.) carton Cool Whip
2 pkgs.
(4 serving size) French Vanilla Pudding
1 can pineapple, crushed and drained
1 can mandarin oranges, drained
Mix Cool Whip and pudding together, then add pineapple, crushed and drained, mix well.
Then add mandarin oranges and fold in gently.
Cover the cake with frosting.

No I don't, I have frozen a few bags of juice and orange bits for use in the next 6 months.What a lucky duck! Do you, by any chance, have a freeze dryer?
@Ladies-Eight I wonder if that cake would still be good without the pineapple. I really don't like pineapple at all. OK, I hate pineapple! Maybe use 2 cans of oranges?
