Whew, cheesecake is done and in the fridge per instructions. I don't think DH and I can wait until tomorrow to try a piece. It did crack but for my 1st one, I think it went ok. Definitely learned a couple lessons along the way so next time the process will be easier.

1. Instead of whacking chocolate cookies with a rolling pin 1,389 times, remember I DO have a food processer
2. Be sure eggs are room temp, not straight from the coop that is 48 degrees
3. Don't blow the butter up in the microwave when trying to melt it
4. Don't taste the batter, it has raw eggs in it

I promise to take a photo when we get it out. (but it looks delicious)!

Thanks for the update!

Taste the batter! The chances that your hens have salmonella is very low. I have been tasting the batter for close to 55 years and have never had a problem with it.

I am going to have to try those cookies. Someday. The recipe has been added to my "Try It" cookbook.
Those cookies are the bomb. DH & I really like the dark chocolate taste to them. I kept thinking of all the ways I could use them or dress them up (although they're very good plain). Here's what I was thinking about:

- You could put a schmear of buttercream frosting on top
- Roll the edges of the dough log in finely crushed nuts
- Make sandwich cookies (like made at home Oreos)
- Make mini icebox cakes with them

I think they would be fun to play around with.

Let me know if you try them!

Yeah, I figured I was safe. And you know, when I was a kid, the best part of Mom making chocolate chip cookies was eating the raw dough (and never got sick once).

I bake cakes and decorate them, scratch recipes are hard to decorate, but fun to make

Hi @jgoldy2 ! You'll have to share some of your favorite cake recipes with us (and let us see some photos too)! I can't decorate worth a darn but DH gave me a Wilton cake decorating set for Christmas...I think he got nervous when he saw what I did trying to decorate gingerbread men.

I just use box mixes, or mostly but I well get my good photos out.

Finally, here are the chocolate wafer cookies and the cheesecake pictures. Having laptop issues off/on, really hindering my primary mode of communication, lol.
