Making these as I type this with DD. I substituted 2/3c honey for the sugar and used organic cane brown sugar. Just added 2 extra tbs of flour as well. Smells pretty dreamy in here right now. PB cookies are my fav!The recipe I posted is a regular peanut butter cookie recipe:
Aunt Abbies Peanut butter Cookies
1C. Butter 2t. Baking soda
1C. Brown Sugar ½t. Salt
1C. Granulated Sugar 3C flour
1C. Peanut Butter
2 Eggs
Cream together Butter, brown sugar, Granulated sugar & eggs. Sift together the dry ingredients. Add flour mixture to butter mixture, stir. Form dough into balls and smash with fork dipped in a bowl of sugar. Bake 20-25 minutes at 350°.

Post a picture of them--it would be good to see what they look like. The substitutions sound very tasty!

They're pretty wonderful. Not too squishy not dry. A great traditional pb cookie. I only cooked them for 13-15 minutes. Still getting a handle on this oven in our rent house. Not a fan at all but it works to make cookies and bread!!
