I love those
X2 I really never understood the difference between regular and Belgium waffles….always thought it was syrup vs whipped cream and fruit toppings??

Belgian waffles use a lighter batter and a Belgian waffle maker makes thicker waffles with deeper squares. Even if you use a Belgian waffle recipe- if you don't have a Belgian waffle maker it isn't really a Belgian waffle. But then again, in Belgium there is no such thing as a Belgian waffle lol
 
My old recipe was one of the yeast based ones and needed to sit overnight.


Belgian Waffles Recipe



Ingredients:
2 c all-purpose flour
3/4 c sugar
3 1/2 tsp baking powder
2 eggs, separated
1 1/2 c milk
1 c butter, melted
1 tsp vanilla extract


Directions:
1. In a bowl, combine flour, sugar and baking powder.
2. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined.
3. Beat egg whites until stiff peaks form; fold into batter.
4. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

(We had some of Ron's yeast pancakes again today with blueberries. So good!)

I'm an ehuasistic chef all round and have been venturing into breads myself for the last year.

Out of curiously have you looked at the no time no kneed range of recipes?
 
Depends on your preferences. If you don't use frozen fruit then chances are you wont use it if you have it.
However if you bake, make smoothies, etc frozen fruit is always good and this is a good guide.

Otherwise jam making is a good alternative and fairly easy to do.

I will note on my freezing berries. I always make sure they are bone dry before freezing as ice irritates me.
