Any Home Bakers Here?

Must just be a bread baking kind of day! We made six loaves, but only one is staying here, the rest goes home with the kids.

Yesterday must have been a busy day in the kitchens! I got ma's Christmas present done...pumpkin bread, 3 kinds of cookies and peanut butter/chocolate fudge. Mailing it all out to WY today, hopefully it makes it in time for Christmas.

I gained weight just baking all those cookies! I think sugar and butter calories were so heavy in the air, they stuck to me.

But I did sleep really well last night!

It sounds like you were busy, but I'm sure your mom will be very happy!
 
If you're not tired of Gingerbread yet, I baked a GB cake today and it turned out quite tasty.

Gingerbread

  • 1 cup melted shortening
  • 1 cup molasses
  • 1 cup light brown sugar
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 1/3 cups boiling water
  • 2 well-beaten eggs.

_________________________________

  1. Mix melted shortening, molasses, and brown sugar.
  2. Add all dry ingredients, sifted together, and mix well.
  3. Gradually add boiling water, stirring constantly.
  4. Fold in beaten eggs.
  5. Pour into a greased 13 x 9 1/2 x 2 inch pan.
  6. Bake at 375 for 40-45 minutes.

** I used a 10 x 10 x 2 inch corning ware dish and baked 42 minutes at 350.

It is soft, moist, delicious. But a real challenge to mix by hand.
