Hard red will work without much help because it has plenty of gluten. Spelt has less gluten so it helps to add some gluten flour. The bread can be a bit flat otherwise.@ronott1 normally I use white wheat for my whole wheat breads. Today I'm going to try Deb's recipe with all wheat flour, but thinking about either red wheat or spelt instead. I know whole grain flour takes more water, is there anything else I should be considering?
