Nice Cookies!Made this new cookie recipe a couple days ago. Guess DH liked them, they're gone (I'll admit, I had a couple)!

Butter Pecan Cookies
For the buttered pecans:
1 1/2 Cup pecan pieces, finely chopped
1 1/2 Tab unsalted butter
For the cookie dough:
2 1/4 Cups AP flour
2 1/2 Tab cornstarch
1 tsp salt
1 tsp ground cinnamon
1 tsp baking soda
2 sticks (8 oz) unsalted butter, melted until browned (step #3 below)
1 Cup brown sugar, packed
1/2 Cup sugar
2 tsp vanilla extract
2 eggs, room temperature
pecan halves, for decorating
1. Melt butter in a large skillet over medium heat. Add in the chopped pecans and cook, stirring occasionally, for 4-5 minutes, or until lightly toasted. Set aside until needed.
2. In a large bowl, combine flour, cornstarch, salt, cinnamon, baking soda; whisk to combine and set aside.
3. Melt butter in a skillet over medium heat; continue cooking, stirring occasionally until golden brown. Allow to cool a bit so when you add the eggs, you don't cook them! Remove pan from heat and pour butter into a large heatproof mixing bowl. Add in both sugars and mix well. Add in vanilla. Beat in eggs, one at a time, beating until eggs are just combined.
4. Fold in dry ingredients, stirring just until combined. Fold in the buttered pecans.
5. Preheat oven to 375*. On a parchment paper lined baking sheet, place tablespoon sized scooped balls of dough. Lightly flatten and press a pecan half on top. Bake in the preheated oven 8-9 minutes. Allow cookies to cool on the pan for 15 minutes, then carefully transfer to a cooling rack.

The hunters said they have an English walnut and some other kind of nut tree in their yard. I can’t remember which is supposed to be producing next year.Those are good! So are pecans, walnuts (black and English both), pistachios, cashews, almonds....
Maybe I'm part squirrel and just never tied that to my love of nuts![]()

We picked black walnuts off of the side of the road and sold them.Black walnuts in baking are delicious too! But much harder to pick out of the shells.
When I was growing up, every fall Mom & Dad would go pick up gunny sacks full of black walnuts. The 3 of us kids had to pick them all, we'd have contests to see who could pick the most during a 60 minute tv show. A lot of tedious work, but wow, so flavorful! Mom used to put them in homemade fudge, divinity, caramels and quick breads. (yeah, we picked a LOT of black walnuts)
