Flour works fine for me. I have found the key to be to make sure the filling comes to a boil. After cooling it sets up fine.I use cornstarch not flour to make fruit pies does better for me to not have runny, soupy pies
I just line the bottom of my oven with aluminum foil and replace as necessary.Bosch true convection wall oven. It is nice not having a bottom element, I have a huge insulated baking sheet that catches most of the stuff that would normally get burned onto the bottom of the oven.
