Any Home Bakers Here?

Hello everyone i haven't had a chance to come in today :frow

I have got my first sourdough bread in the oven it's coming out in 15 minutes. I think I may have messed up a little but fingers crossed it'll be ok.
There was so much going on here that it was in the fridge for about 20 hours. I do hope the middle of the oven is ok.

I think it needed more time in the oven and not so much messing with. I will get it right one day. Would you use the centre or top of the oven?
I put the bread in the middle of the oven. It is a gas convection oven so is a bit different.

For sourdough bread like that, you can bake until it is very crispy. I bake at 400F until the internal temperature(using a probe thermometer-- like used for steak) is 195 to 205F

Sorry for not using metric temps!
