The Champlain bread uses bread flour or ap flour, spelt flour and rye flour. You can mix up the flours but should use the total weight listed.
If you will be using all whole wheat flour instead of bread or ap flour, add some vital gluten powder to the recipe. Something like a quarter of a cup. That should be mixed with the whole wheat flour and be a part of the weight for it.
