The sourdough discard pizza I made today turned out great! The dough was easy to handle and cooperative. Also delicious. This was the best pizza I ever made! GirlChild just wants a plain cheese pizza, but DH and I go all out. Ours had black olive, onion, and artichoke hearts, plus his half gets chopped green chiles. Will def'ly make this recipe again. Will post recipe tomorrow.

Made the Rhubarb Meringue Dessert.
Recipe from Betty Crocker. Maiden voyage on this one for me,,, so I followed things exactly. :thumbsup

Here is my play by play. Diced the rhubarb as shown below

IMG_20230606_163621143.jpg

I had slightly more than recipe called for,, but not by much
IMG_20230606_163733540.jpg

I did not have Half & Half, so went with coffee creamer
IMG_20230606_170043225.jpg

These are the ingredients for step 2.
Egg yolks, Creamer, ,sugar, 1/4 tsp salt, and 2 Tbs flour.
IMG_20230606_171823669.jpg

Added the rhubarb and mixed all together.
IMG_20230606_172146015.jpg

This is step 1, for the crust portion.
IMG_20230606_164648187.jpg

I pressed into my pan. I don't have a 9 x 9 pan, so I used my 7 x 12 pan instead, Approximate equivalent surface area. I used a spoon to press into place.
IMG_20230606_171739880.jpg

This is out of oven after 10 minute pre-bake. I poured the rhubarb mixture into pan, and baked for 45 minutes.
IMG_20230606_174416246.jpg

As the baking is still going in oven, I start making the meringue topping.
IMG_20230606_181105268.jpg

This is how my Meringue looks before being added to top of rhubarb dessert.
It is actually quite pure white,, just the lighting for the picture made it look slightly less white.
IMG_20230606_183236620.jpg

Out of oven, and ready to be topped with the Meringue topping.
IMG_20230606_183314107.jpg

Getting the Coconut ready to sprinkle on top.
IMG_20230606_183537919.jpg

Ready for final 10 minutes baking.
IMG_20230606_183623893.jpg

Out of oven done.
IMG_20230606_184705877.jpg

Had to wait until cooled, before removing first 2 squares.
IMG_20230606_214610274.jpg

Turned out delicious.:drool:drool:drool
I refrigerated the remaining dessert.
IMG_20230606_212636221.jpg

Notes.
This is a dessert, rather than a cake. There is not much flour in the rhubarb portion. There is also no baking powder, or yeast to create rise.
This is also my first try making a meringue topping. I am satisfied with the results:celebrate
I am already considering another recipe for my next batch of rhubarb. That one is a cake, with rise. When I do bake it, I will compare the 2

Thanks for the recipe!

I also baked a fresh strawberry cake. I used Ron's recipe from index. I have baked this before, but wanted to share it today with everyone regardless. My slight variation,, I topped with streusel instead of just sprinkling top with sugar. You may notice that I do like to use streusel very often.:drool:old
Fresh strawberry cake.JPG

This is a mini Play, by play. Prepared dough into a butter greased 9 inch pie pan. I drowned the berries best I could. :thumbsup
IMG_20230606_193156710.jpg

Sprinkled streusel on top,, and into oven.
IMG_20230606_193452014.jpg

Out of oven beautifully tanned. :highfive:

Of course it is delicious.:old:drool:drool:drool
