I know of no breed that will take on predators and win all of the time. Big roosters are better than bantams for sure. My money would be on an Aseel or Indio Gigante if all you want is a rooster to fight off hawks. Have you considered a big Gander goose for a protector?

I think geese are the way to go as well, but years ago we did lose five white chinese geese over three months to a bald eagle. They also will not win against any canine their weight or larger, so if the coyotes have figured it out then I'm not sure that's going to work in a high-predator area. While they did keep away foxes and beat up a few raccoons, a large guard dog or two has worked the best for keeping watch over the years. Otherwise, a structurally sound closed coop and run is the only way to keep them from getting eaten. Consider adding a portable run, if you cannot secure a fenced and covered area, and letting your chickens enjoy some grass in morning hours, as I've discovered most things love chicken for dinner over breakfast.
