So while most didn't seem to make a difference, it was very worthwhile for the 2 that makes a big difference.
I'm glad you got some benefit of it. I'm sure I read some time ago that intolerances often come from one's microbiome, rather than one's own flesh, and since microbiomes are in a constant state of flux, and can be manipulated by diet as well as fecal transplants, a diagnosis need not be a lifelong sentence.

I have intolerances too. It was very annoying about 3-6 years ago and I went to doctors, had some test and ended with an doctor who specialised in allergies.
The conclusion was the allergies probably got triggered by antibiotics (after thicks with Lyme disease).
The diet helped but was a big nuisance in social life.

About two years ago a friend of mine who had similar problems with food went to an alternative practitioner. She thought the treatment was weird but it helped her to leave the gut pains and eat normal again.

I followed her footsteps, and it helped miraculously for me too. The last few months the stomach/gut pains are increasing slowly again. Spicy food and some cheeses don’t become me anymore. If things get worse I plan to go back to alternative therapy again for a few sessions.

I went to a restaurant 2x in 2012. First time they had one dish that was wheat and dairy free. Most expensive thing on the menu, salmon. But it was very good, didn't bother me and I was out for someone's birthday.
The second time a different restaurant and I thought the salad would work and explained no cheese or croutons and why. She wrote it down but someone else brought it with croutons and Parmesan. I explained and she admitted she added those because they weren't on it.
I decided eating out was too much trouble.

I needed 6 sessions to recover. Bc I have an expensive health insurance, most of it was covered.
Yes sounds weird but so did acupuncture. Lots of things that are common nowadays were weird when they were brought out in the west.
About 40 years ago I went with my cousin on a 4 hour drive to take her horse to an acupuncturist. It did help the horse. Totally unheard of then
 
Last week I worked a little on the chicken coops and runs to eliminate a few flaws.

I stapled a piece of EPDM on the lower part of the playhouse coop where the rain came in that dripped down with North West storms. Now the rain is diverted to the soil. Hopefully the water doesn’t come inside the playhouse anymore.

After 10 years the wood on the bottom of the extension finally rotted so much that I needed to replace it. Never thought when I made the extension that I still have the original coop and chickens who need a safe coop for the night. This time I used bricks that can’t rot.

And the last problem: the thin hwc under the entrance of the largest run broke (rusted) where it hit the ground. I added sturdier hwc, but couldn’t finish the work bc the loam/clay soil is too hard to dig in after all the nice weather we had.
 
The chickens didn’t mind we had so much sunshine in the last couple of weeks.
