Brown eggs have less cholesterol

We use coconut oil to pop popcorn with, but I only add melted butter after it is popped, as it will burn with high heat and become carcenogenic, just like frying with olive oil, so I only use olive oil for things like dressing, etc. It is very healthy for you, but not when it is used at too high of a heat.

I learned all of this in the coconut oil book I mentioned earlier, it really sunk in when I read it there-don't know why it didn't sink in when I read it other places!

And here all the time I thought I was doing something healthy for us and it was carcinogenic!

I will try the homemade butter spread with
coconut oil. sounds good.
but am just getting up off the floor
after reading about homegenized eggs. LoL

It's when you fry butter until it turns brown which is usually at high heats that makes the butter unstable and a carcenogenic, actually. That's why I stay away from frying anything with butter at a high heat. If I use butter to cook my fresh, yummy eggs, I do it at a low heat. But I would think that the temperature that is needed to pop popcorn with both butter and coconut oil would be far too high, and cause the butter to brown-perhaps you don't pop your popcorn on medium high like I do. I would just be careful not to ever allow the butter to brown when using it to cook with. Hopefully my saying this will keep someone from getting cancer someday-I wouldn't want any of my chicken loving friends to battle that one!!!!

Edited to add: sorry, I just realized that I made a mistake, I heat my pot for popcorn on medium heat, not med. high- my stove knob goes from low to high with 5 being in the middle, and 5 is what I heat the pot on.

Does this mean that my glorious sauteed shredded sweet potatoes with browned butter & garlic is giving everyone cancer?

I don't burn or smoke the butter, just cook it slowly until it *just* browns, then add sage leaves and crushed garlic cloves.

As long as you don't hit the smoke point you will be fine. If you are really concerned about it, you can always make your own clarified butter.

this
article seems to point out that the oils causing cancer are false. it is the RE-HEATING of oils repeatedly that can cause free radicals to form.

unless we reuse our oils, it looks safe. i have searched and searched and cannot find anything pointing to oils and/or butter causing cancer or releasing free rads except for the butter dye.

no matter what, we can agree to disagree and try to research for ourselves so we can enjoy foods and not worry.

I'm not sure if the ad campaign ran outside of New England, but I grew up in the 70s with TV and radio commercials that featured the jingle, "Brown eggs are local eggs, and local eggs are fresh!" We were all convinced!
