What do you guys do with excess eggs? I only work with a handful of people who rarely if ever want any. I've been feeding my 2 pigs 8 a day but I'm still getting more than I know what to do with. I bake an egg bread almost daily but as I live off grid solar it's going to get hard to do as the sun lowers on the horizon.
You can dehydrate them. Preppers pay a lot of money for dehydrated eggs.

And I almost forgot to mention egg salad...yum! We like to make it up different ways using herbs or seasonings to vary the taste.

I end up throwing away so many eggs, it's sinful. :oops:
I do try to boil them and just crush them, shells and all, and give back to the birds.

I need to buy a pasta machine.
 
How do you do that?
I use a nesco round dehydrator. The eggs are first blended in a blender. then poured onto the yogurt insert in the tray. Dehydrate at 135 over night. Next morning, break up the eggs and blend them dry in the blender. The slightly wet powder goes back onto the yogurt trays for another 6 hours or so. Give them a final blending and then bag them up!

I can dehydrate about 30 eggs in 5 trays. the dehydrated eggs should be kept air tight--vacuum sealed. They should be good for several years that way. They can also be frozen

Use to replace eggs in baking. They can be re hydrated to make scrambled eggs and added to smoothies
