Ah brimstone, how frustrating. D: No worries though, deep breaths. I hear a lot of people have issues with the hot water therms, especially in small styro bators. I'm not by my desktop right now, but when I am, there are some helpful links I'll send your way, especially dealing with mounting the t-stat on metal for improved function. You already know about the drilled holes, good on you, and don't forget the heat sinks jenjeran mentioned. I hear the whole line of Johnson controls aprophet mentioned are really reliable when hooked up. And I'm very interested in what ahs will be posting.
The most expensive parts of my incubator have been, by far, the t-stat and the wet bulb\\dry bulb mercury hygrometer. I really wanted no kidding accurate temp and humidity readings, and temp control for my cheap lil bator. After a ton of reading, I settled on the Reptitemp5oo (which you can buy online right now for a total of about 24 us dollars..its $40 at our pet stores!). I've just started testing it, but it has been holding my temps rock solid. You NEED a reliable thermometer (or two or three..) with it though because you adjust the t-stat with a dial..there is no digital read out. I've heard nothing but good things by people who use it for chicken incubators. I've heard criticism from some reptile folks, probably because they have the max 500 watts running through it every hour of every day, while most chicken folks have 200 or less going at intervals. Something to consider though. And, it is plug and play for up to two heat sources. You just plug them right in, no wiring. Of course, in your case you'd need a plug adaptor if Oz is like England.
