I've always read that you can freeze egg whites but that yolks don't freeze well. Cookie dough usually freezes well, depending on the dough. I usually make my almond sugar cookie and gingerbread cookie dough a few weeks ahead.

I have a few variations using the sugar cookie dough so this saves me time. However I've never considered starting this early! Kudos to you for thinking ahead. Let me know how it goes. Maybe it'll encourage me to get a head start too.

I just feel so bummed at Christmas when they're are no eggs for all of my baking.
But now @Chiqita is wanting me to make her doughnuts. So baking may start early this year

I know, it stinks! I keep some Orps and cochins so I at least get a few for myself but there are never extras left over for customers. Last year I ran out completely so we had to do without creme brulee for the holidays. It was soooo sad! *sniff*
 
I must try freezing a few to see how it goes. I've read they're gummy but bake well.
Dehydrating them?? In a food dehydrator?
I have dehydrated eggs in my Excalibur food dehydrator. I have a store of them in my freezer and some in jars. The older eggs, I dehydrate and feed back to the flock in their wet mash in the morning. In fact, I have a bunch that I'm getting ready to dehydrate. This is my first year to have a store of dehydrated eggs so I don't know how they will do for baking. We have rehydrated them and used them for scrambled eggs. They don't taste like fresh ones but are palatable. The texture is different. If you are interested I could send you the method that I have found works the best.

I think you use a tablespoon per egg in the recipe for baking. It might be a teaspoon so I will look it up later.

Hi guys, its been a while. I have a concern. One of my girls is squatting and when she does she sort of stomps her feet like dancing or something. Does anyone know why?? It's kinda bothersome, she's the only one that does it. Thanks

Ok, it's ration time. I will store eggs for Christmas baking. Somehow someway. I'll try it all!
We have so many eggs all year, it's a shame to be out when you need them most

That is completely normal. I have had a bunch of them do that.
