While there is no doubt in my mind that his recipe makes a delicious biscotti, for all of us lazy cooks I have an alternative.
Take a box of cake mix - 2-layer size, any flavor - mix with 1 stick of softened butter, 1 cup flour and 2 eggs. This will make a really stiff dough - almost like Playdoh.
Shape this dough into 2 logs - about 2" wide - and place on a greased or parchment-lined baking sheet
Bake at 350 for 25 minutes, remove from the oven & let cool for about 10 minutes.
Slice each log crosswise into 1/2" slices and separate these slices slightly
Bake for 10 minutes more then let cool completely.
You can mix in extras - like chocolate chips, fruit or nuts along with the flour,butter & eggs.
I've done:
*chocolate cake mix with chocolate chips
*lemon cake mix with dried cranberries
*yellow cake with chopped pistachios
