Chickens wont get water in the snow

Think along the lines of 1 sq ft per bird.

Should I cut it on all sides?

Start with the gables, get them covered with HC..... see what you have from there. Not sure of your coop dimensions, but, that the best place to start. That may keep breezes off them in the winter. If they go into the lower walls, you may risk a breeze.

Keep in mind that they drink a lot less water in cold weather and they will also eat snow for hydration.

Mine drink just about as much, unless they've been noshing snow.
