Which, in your experience or opinion, yields more breast meat out of those?
I have a red broiler i wanted to breed to my cornish cross but last night I was like maybe a heritage rooster would be better since they breed true. Plus, this red broiler doesn't have much breast meat. My cornish cross has about the same and it's half the size!

If you're crossing onto Cornish broiler, that's where you're going to get your breast meat influence, so I don't think it really matters. Being in TX, I'd probably choose Dorking just because less feathers would seem cooler, to me.

Yeah, that definitely is something I was taking into consideration. I was leaning towards the LB, but then I came across the Dorkings. Read a lot of good stuff about taste and texture as well.

I would go with Dorking, intact I am breeding my Red Rangers Hen with my Dorking Cockerel when he finally matures into a Rooster. The Entire reason why I got the red Rangers was for this. The Red Rangers are younger but already laying eggs as the Dorking isn't even crowing yet. Currently I have an Ayam Cemani mating with them to see if I can make large breasted Black Meat Chickens. In a month I believe I will be breeding the dorking with the red rangers. Might even get a Cornish X Hen and do the same.

Another Heritage Breed to consider would be the Buckeye, if I had a Buckeye Rooster I would but him over female meat birds.

I have a red broiler i want to mate to a slow/small growing broiler.
Red broiler has very little breast though. :/

I would say, for a pure bred with lots of breast meat, Brahma, heavy bred Light Sussex, Ixworth, True-to-type Plymouth Rocks, Black Australorps, or Jersey Giants. I wouldn't use Dorking for meat, they are smaller birds. And cochins take too long to mature
