Whenever I have an excess of zukes, I chop them very tiny, or shred them, and hide it something else. Soup, egg casserole, rice stir fry, zucchini bread, muffins, pancakes...
Guessing zucchini noodles aren't your thing? If the fam likes zuke it's not half bad with spaghetti sauce.

Yeah, zucchini leaves are vicious non-vining monsters. Prickly prickly prickly!
Chop 'em up (or grate them) and stir them into your spaghetti sauce while it cooks. It'll puree up just fine. And if you genuinely "hate" zucchini. you just haven't found the right zucchini bread recipe, yet!
 
Sliced in circles and "sweated" with a little salt - lined up on a jelly-roll tray and doused with good olive oil and a ton of garlic ... then roasted until it's soft and the edges are brown... Italian Heaven!
Hmmm I’ll try it maybe. I did balsamic zucchini tonight 🤢 didn’t like it

I’ve never had zucchini bread and I’ve been avoiding flour and breads.
 
I have another maybe I should grab it too.

How do you store them? In the fridge or in pantry?
You can leave them on the counter for up to a week if the skin isn't damaged.

Zucchini all by itself is not impressive no matter what you do, but zucchini fritters are yummy and I've used them as "boats" to fill with other goodies then set under the broiler for a few minutes.
And MROO is right, puree it into something else and you'll never know it's in there.
