Zucchini all by itself is not impressive no matter what you do, but zucchini fritters are yummy and I've used them as "boats" to fill with other goodies then set under the broiler for a few minutes.
And MROO is right, puree it into something else and you'll never know it's in there.

I give the baseball bat size to the poultry. I smash the first few and then the poultry will open it up themselves
Sometimes I purposely let them get big because they are a little drier inside. Good for grilling that way or using as rounds under another kind of food. Or, what I do the most of....dehydrate it. Than I have zucchini all year long.
Yep, birds love them. And bonus...often I'll get zucchini growing in the chicken yard the following year. :D
