I’m going to do a stir fry with them with some other veggies then I’m going to make fried rice.I use it in stir fry, another place where the colors look good, and it doesn't add much actual flavor. Garlic! Onions! Soy sauce! Sesame oil! Who notices the zucchini?!

On the counter for a couple of days, like fresh fruit. Once it's cut, put a baggie over the end and fridge it. You can also shred and freeze it. I freeze mine in recipe-portion bags. That way, they're ready to go.I have another maybe I should grab it too.

My kids' favorite zucchini recipe is faux crab-cakes. Just use your favorite crab or fish-cake recipe, but substitute grated zucchini for the meat.
Pan-fry them in a little bit of canola oil & butter. They also freeze really well - ready-made, on a cookie sheet. When they're solid, move them to a freezer-friendly container (bag, box or bin) and pull out however many you need whenever you need them.
