black with white spots on their heads and white bellies? Those would be the boys. They get the barred gene from the hen. She can't pass it to the daughters.

black without the white on head would be female.

They come out white variety and black variety. The little one on the right is a leghorn
 
Yeah. I'd be thinking those black ones are boys. All the sons from a barred hen should be barred. So when they feather you will know.
 
If I cross my black Ameraucana hen with my Red Brown Ameraucana rooster am I ruining Ameraucana genes for my chicks? Should I only breed certain color to certain color?
No it won't scream up the genes with the parents. But since black is a dominant trait most of the chicks will be black. And some will even have red feathers bleed through if they take the red from their father. But most of the chicks will be black.

If you want pure Ameraucana, you'll need a black rooster for your black hen and you'll need a "red brown" hen for your "red brown" rooster. What is Red Brown exactly? But I'd mate your rooster over your black hens because mixes can be pretty. Any other way you do it you will still have pure Ameraucana chicks. But they'll be mixed colors, but they'll still be pure.
