Would these be considered olive eggs? Obviously one is brown for a contrast hah

I would call them olive or light olive. Some people call them different things depending on shade, such as jade, peppermint etc but those terms are subjective
 
What color is inside when you crack them open? Olive eggs are blue tinted inside.
They are green, so shell will be blue tinted when you look at inside of shell (easier to see if you peel the inner white membrane off immediately after opening egg).
How dark a green they are depends on the genetics of both parent birds, some have a stronger blue shell gene as well as varying brown coating genes. There are innumerable shades of both blue and brown involved in 'olive' eggs.
