I almost never bake duck, mostly because when I dress them, I skin them. however, if you are going to bake a duck, it has to be prepared correctly, then cooked perfectly.

in a gumbo, or stew it's very good. chicken fried it's very good. wrapped in bacon, and cooked over a wood fire, and you're in heaven!

sounds good . the fire smoked the best !!!
 
actually, I'm pretty lucky when it comes to getting new birds.

place called sea breeze hens. She gets hatchery chicks and raises them to sell. She also will deliver my order close to where I work. I had gotten 20 pullets and a few roosters last month.

but I'm always looking for a bargain on laying age birds. as well as supplies.
 
right now, we have about 28 pullets/hens, and 1 full grown rooster, with 3 younger roosters, I got when I got the pullets.

I'm wanting to put a RIR roo over black Aust and barred rocks, as well as put a Black Aust roo over the same hens.

but I did get some cinnamon queens for immediate gratification.
