Hard boiling fresh eggs-This one WORKS!

My method is easy and works on eggs fresh from the nest as well as older ones.  Bring the water to a boil first then gently lower the eggs into the water (I uses a slotted spoon for this).  Let the water return to a boil, cover with a lid and turn off the heat.  I let them sit 11 to 15 minutes for hard boilled eggs.  Immediately drain the water, flood with cold water or sit in ice water just until cool enough to handle and then peel.  The secret is bring the water to a boil first and cooling down quickly and peeling them right away. 

I knew I'd find an easy way to hard boil my fresh eggs on here after struggling to get the shells off. This method worked great for me excited I didn't add a lid or removed from the heat. Just keep it on a slow boil. Cooked for 15 minutes and immediately put in ice water to cool. I was amazed at how easy they peeled.
 
Update; It definitely has to do with the age and freshness of the eggs. Since I date all of mine, I collected 6 of the oldest eggs ...one from Feb, and the rest around March 1st. I did the slotted spoon in boiling water version. Let them set for 20 minutes in the hot water. Cooled them under cold water and cracked the shells. The shells slipped off nicely, and none stuck.

Here we use a traditional eggs in bring to boil turn off let set 10 mins
then
we dump the hot water and put in tap water just to cover the eggs.
Top on pot and shake the pot, not like your trying to make egg salad in the pot...LOL
Just hard enough to get the eggs cracked and moving against one another
60% of my eggs are peels when I open the pot, I just remove and rinse to make sure no last fragments are hanging on.
The eggs that are left usually peel in one piece, sliding right off the eggs.

Well this is how I do it and my eggs turn out perfect every time.

I am finding that slow boiling and then turn the heat off and let sit in the hot water until it cools to warm. I then crack the larger end of the egg. last couple times I tried it has worked great.
 
I have read that adding 1/2 tsp of baking soda for every couple cups of water helps the peeling, as well as an immediate ice-bath after sitting for ten mins in the hot water
