Of course, I sub'd some stuff... cooked my own Hominy, as previously mentioned... and made my own red enchilada sauce also (I can't find a can of it without a lot of yuck in it ..msg, 'ates and 'ites, etc. ...blah!). Oh.. I also used fresh oregano ..cuz I am out of dried stuff.
I'll probably make some fresh gorditas to go along with the soup..
Aneesa - WOW! Not just a delicious dinner, but a labor of love. How in the world do you make hominy from scratch?
It's still spring like here, so I made a version of Waldorf salad with poached chicken breast, grapes, celery, apples and walnuts. Served it on bibb lettuce with dinner muffins.
KFC had to break down and buy supper out as I had a late Dr's appointment and by the time I went there and got back I had lost any strengh I had left. Man I hate late appointments.
Poured rain all night here and then woke to fog and ice, school canceled, I really didn't want to leave the house but did and survived by the skin of my teeth LOL.
