We made english muffin pizzas tonight. We use homemade tomato sauce, grated cheeses and onion slices as topping. We had broccoli fresh from the garden as a side dish and home canned peaches for desert.
 
Aneesa - I've never seen corn kernels that big, and I live in the grain belt!

thechickenchick - yummm! It's been a while since I made chicken strips, they may have to make an appearance here real soon!

Both skand and FarmerDenise are using English muffins for pizzas ... is that a regional thing? We usually use bagels, or tortillas. I'm going to have to try the English muffins.

Since I missed the memo that last night was Italian night, and because it was 65 degrees today, we had a grilled vegetable salad (zucchini, eggplant, red and yellow bell peppers and onion) topped with cubed fresh mozzarella, sundried tomato slivers that I dried last summer and oil cured black olives, doused in a nice roasted garlic, anchovy and olive oil dressing. Home baked ciabatta bread to soak up the juices ... a little taste of summer!

However, there are some changes that I made. I use unsalted butter and 1 t. of salt instead of 1/4 t. salt. With the changes, it makes one tasty and quick dinner roll recipe.

Redfeathers - please share the garlic and herb noodles recipe, they sound good. I never seem to be able to eat much of the cabbage I buy. I look at 10 feathered faces and end up "sharing".

Jim is the one that told me to use the english muffins for the pizza dough.
Trust me, I'd never heard of doing it that way either!
We had leftover lasagna tonight, no where in the mood to actually cook!

Noodles:

2 1/2 to 3 cups flour
two beaten eggs (whisked)
pinch of salt
1/2 cup of milk
1 Tablespoon of butter
1 T Italian seasoning
1/2 teaspoon garlic powder

Mix all together, fold out onto a floured surface, knead until smooth and elastic, if the dough is sticky, keep adding more flour until the stickiness is gone. Once dough is smooth, divide in half and roll one half until very thin. Cut into long strips and place on drying rack or floured cookie sheet. Do the same with the second half and let them dry several hours. Cut into desired sizes and boil in salted water for about 5 minutes.


Edited to add one tablespoon of butter. Sorry about that guys!!
