Hey Grandpa, What's for Supper? Part 2

Tonight we're having 'Piles.'

Piles consists of spanish rice, refried beans, sour cream, guac, green chiles, toms, tomatillos, cheese and anything else you can imagine. We serve it up in a pile on a plate (or in a bowl) and bury it in ranchero sauce (tomatoes, fresh roasted anaheim chiles, chicken broth, cinnamon, garlic) and eat it with corn chips.

This is obviously a take on nachos, but the idea is fewer chips, more stuff! We eat as healthfully as we can, so it's brown rice, fresh veggies, I make the refries using nothing but salt and a bit of oil, romaine, etc.

My kids love to have 'Piles' for dinner!

But, in order to HELP YOU with your piles, I'll need an address and an Xtra set of silverware.....(and a cold Mexican beer!)

Everything sounds so good. Piles, pork chops, chili..........

I'll be using some of the leftover smoked ham for a new recipe. It's Ham and Corn Chowder. I need to bake some zucchini bread today, too.
 
For breakfast on Labor Day we had homemade honey-nut bread, canned grapefruit sections mixed with fresh summer fruit, nectarines and banana, and cocoa.

Yesterday we had bar-b chicken on the grill. It was the best I've ever had. My DH was messing with the grill trying to get the fire going because it was drizzling. He told my oldest teen daughter to marinate the chicken in "something" but didn't give her any more direction than that. She chose Balsamic Vinegar, for some reason, she said she didn't know why. She marinated the chicken pieces in it for about fifteen minutes to half an hour. Then they used regular bottled barbecue sauce to brush on. The chicken was to die for!!!!! Yum, yum!!!! We just had plain old corn with it, I don't have any sweet corn, darn it.

Hey gang! Sorry I've been MIA. Life has been busy crazy. It's nice to see some new faces and some new old faces! Welcome and welcome back!

Monday - Pizza, salad, and fruit
Yesterday - meatball sandwiches and salad
Today - The kids did B4D but I opted for a chicken sandwich. I was running around so much today that I didn't eat a proper lunch and needed a little protein.

I was hoping to make soup for Thursday, but may need to hold off on that for a bit. It's supposed to be in the mid-80s tomorrow.
 
BYB it is great to "see" you! I have been MIA too! Just too much going on I guess.

Biscuits and Gravy were a big hit last night.

Tonight DS is having a BBQ with his FB team. They do that every Thursday. DH has plans in town right after work so I won't see him until late. Me, well, glass of wine and a bubble bath! Does wine count as supper?
