Tonight we're having 'Piles.' Piles consists of spanish rice, refried beans, sour cream, guac, green chiles, toms, tomatillos, cheese and anything else you can imagine. We serve it up in a pile on a plate (or in a bowl) and bury it in ranchero sauce (tomatoes, fresh roasted anaheim chiles, chicken broth, cinnamon, garlic) and eat it with corn chips. This is obviously a take on nachos, but the idea is fewer chips, more stuff! We eat as healthfully as we can, so it's brown rice, fresh veggies, I make the refries using nothing but salt and a bit of oil, romaine, etc. My kids love to have 'Piles' for dinner!
