I read a lot about processing chicken when we got some meat chickens. They way I understand it ( and they way I do mine), you should leave the processed meat in the fridge to rest before you freeze it. I leave mine in the fridge about 24 hours & then I put it in the freezer.
2/15 - so far over the last five days we've had 1/15, 2/15, 0/15, 1/15 and back to 2/15 today -- four more have become some serious squatters with super red faces, so fingers crossed we'll break into the 3+ a day soon
