I usually just freeze it in bags and then let it thaw out in the bag.

Yes. Or put it in 1 quart bags and freeze. To use, peel the bag off and presto!
Another thought, since sweet taters are used to make "pumpkin" pie, can I use pumpkin mash to make candied sweet taters? Enough sugar and cinnamon, who can tell the difference?
Candied mashed pumpkin is just as good or even better than mashed sweet potatoes.
