The hardest part to me..before today...was the spreading the masa out on the husk.
Today I got that down pretty good.
My double today with making tamales is the cooking part.
I finally figured out I was cooking it on too low of a fire.
Only took me about 4 hours after I started cooking them to figure it out.

Oh..and the part about spreading the masa on the smooth side, but that really didn't make much of a difference.

It really doesn't matter that much which side of the corn husk you use.
I am able to unwrap them just fine!

Thank gosh..I thought for sure they were all going to be ruined.
I always let the natural curve or shape of the corn husk determine, spreading the masa in the concave part. Made both sweet and savory tamales for family b'days.:)

That is pretty much how I did it, with the natural curve.
What is a sweet tamale?
I have never heard of one before.....don't tell me I can make pumpkin filled ones???
I stil have pumpkins to cook.
