So I did this experiment which I thought was a complete fail:
I laid some eggs on their sides overnight.
Put batch #1 in cold water and brought to a boil.
Put batch #2 in a separate pot of already boiling water.
The ones from batch #1 were still lopsided and looked just as horrible as before.
I only peeled one from #2 which was slightly off-centered but it was way too soft for me eat and left those for my husband. Well he didn't eat them either, so I went to cut them up to give to my chickens... and look:
they're perfectly centered!
So is dropping in boiling water better than starting with cold water?
Now I have more experiments to do...
