I'm FED up with Hard Boiled Egg DISASTERS!

So I did this experiment which I thought was a complete fail:

I laid some eggs on their sides overnight.
Put batch #1 in cold water and brought to a boil.
Put batch #2 in a separate pot of already boiling water.

The ones from batch #1 were still lopsided and looked just as horrible as before.
I only peeled one from #2 which was slightly off-centered but it was way too soft for me eat and left those for my husband. Well he didn't eat them either, so I went to cut them up to give to my chickens... and look:

they're perfectly centered!
So is dropping in boiling water better than starting with cold water?

Now I have more experiments to do...

I always drop them in boiling water. If the eggs are pretty old it won't matter.

Do you happen to know if both batches of eggs in your experiment there are the same age?

Also those eggs in the photo look perfectly cooked... definitely not too soft for me! Send them my way. :)

Way back in a different Century and Millennia, when I was a lil snipe,,, I used to eat soft boiled eggs that mom would give me. The egg would be placed in a small shot glass to keep it upright. Just the top 1/3rd of the shell was removed. Ate the egg out of shell with a teaspoon. I need to try that again to bring back some pleasant child memories:)

Yes, I know, I'm weird about that! I do like soft fried eggs on english muffins though.

It's very likely that the eggs I used were different ages, so I don't really have a good control group. :confused:

Oh yes! I was just reading about what eggs cups are used for (after I found some glass chicken-shaped egg cups at a thrift store being sold as votives) and they're to hold soft boiled eggs while you crack them open and dip toast (soldiers) in the hot runny yolk. It's apparently the only way to eat an egg in the UK, and they're very popular with children. Guess I'm just an uncivilized American and never knew the proper way to eat an egg. My parents raised me totally wrong!
 
I cook boiled eggs every couple of days. They come out quite perfect, which is unfortunately not needed since I don't care about looks!

I store them pointy side up. I only add them to the pot when the water is at a heavy boil, and set a timer for exactly twelve minutes. No touching the eggs in the water. When the twelth minute is up, take the whole pot, dump in the sink and run ice cold water over them for 2 minutes. I find they peel better if you let them totally cool and sit in the fridge for a few hours.

I was raised on soft yolks so I honestly don't care for hard boiled eggs (exception: egg salad or other salad applications, as soft boiled won't work for that) but hubby loves his deviled eggs, so hard boiling is a thing for me now.

Over easy or soft poached is the way to go. :drool Or a soft, just-setting scramble (not hammered like most diners do it). I have a soft poached egg for lunch almost every weekday.
