Insulation or not?

If they are not using valuable energy in winter trying to keep warm it should help with egg production. Plus insulating coop will help prevent eggs from freezing.

Would you suggest a light in the winter just to be extra safe?

As a general rule of measure each average size chicken produces approximately 10 Watts of heat. They will be warm without light bulb. If you want light to supplement lost daylight in winter months then place light on timer to make up difference of lost day light.
