Picture an early 20’s girl trying to feed her (older) vegetarian Bf for the first time... “omg, what do I do??? What will he eat?!?" The first few meals were... interesting, to say the least
Oh. My taking me all the way back to uni & the 1st vegetarian I ever fed! What do you feed these people?!

It’s confusing at first... we both learned a lot, he taught me how to cook good vegetarian meals, and I got him eating ethical meats... there were several scary meals! Mostly on my part
We are in agreement. :) My only point is if I, who am so little interested in food & cooking, can manage it, then anyone with a modicum of interest & skill can. I've known a few nut jobs & I'm on my daughter's case because she has let her iron levels get dangerously low. If nothing else use a vitamin supplement! I do get my child's problem which is more to do with lifestyle than food choices but her work hours just mean she has to be a little more vigilant. She's asked for our eggs...:lau

I've got better over the years. I've had to cook well with a side of meat in mind for the man. He's actually eating less meat & when we were looking after his mum just before she died she couldn't eat a lot of meat but loved the vegetarian meals I prepared.
 
There's just a huge variety of things: patties of all sorts, including nut [my favourite]; quiche can be made from anything; rice, pasta, pastry...soup. My favourites include an African peanut butter soup & a wild rice & sweet potato salad ~ & they will fill you right up as well as being super healthy. I like a mild curry but curries aren't the only sauces available these days. I hate cooking but if I can manage this it's seriously not that hard.:rolleyes:

I have strong opinion on peanut soup, YUCK, lol.
