I'll try to answer your questions as best I can, I'm sure there are others that will chime in.
1) Type of chicken: Depends on whether you want a brown egg layer or white egg layer or a rainbow egg layer. For brown eggers you can try Plymouth Rocks, Rhode Island Reds or Orpingtons. For white eggs you can try Leghorns, Anconas, Minorcas, Rainbow eggers you'd get Ameraucanas
2) Pullets will start laying sometime around the 15-16 week mark, maybe later, depends on the breed.
3) Chickens will roam a bit in their search for food. It would be best to have a secured run and coop for them so they don't become targets for neighborhood dogs, cats, hawks and other forms of predators. You can allow them free range time if you want under supervision if you have a problem with predators in your area.
4) Well chickens can live several years. They do go through a molt when they will stop laying, but they will resume laying again once the molt is over. Hens are most productive during their first year or so. You can try and rehome your non producing hens or you can butcher them and put them in the stew pot. Older birds are usually not tender enough for things like roasting or frying.
5) Well there is a weekly sale at the stockyards in Shelbyville, but best advice is don't just buy on impulse, ask questions and make sure that the birds are healthy.
