Need recipe for Olive salad

    I remember going to a resturaunt that had this wonderful Italian sandwich that had meat, salami, ham, cheese, tomatoes, and more of that olive salad ingredient. One thing I could taste is the hot peppers but didnt like the heat or spiceness of it. Olive oil was in that stuff. Black and green olives were chopped up very fine. Yummy!

    Now I would love to have the homemade version of this "c" sandwich. I can not spell it.

    any recipes?

    Many times olives, capers and roasted red bell peppers are finely chopped and olive oil is added, this is commonly called a Tapenade

    Might I suggest you simply recreate what you had to please your palate:

    1/2 cup pitted calamata olives
    1/2 cup pitted green olives
    2 Tbls capers
    2 Tbls flat leaf parsley
    3 Tbls EVO

    Optional: 1/2 cup finely chopped tomato

    salt and pepper to taste


    Finely chop all ingredients and combine in a mixing bowl. Taste for seasoning, perhaps add a splash of lemon juice or some lemon zest. Let sit for a while for flavors to combine.

    Yes I will certainly try that recipe. I never did like hot peppers but do like those red things you stuff in olives LOL! Pimento I think! Yummy! [​IMG]

    Looks so easy to make! Hungry for one! Now I need a whole wheat bread instead of Italian bread.
