This is an awesome book! I'm so glad I bought it this year! And thanks for the recommendations on which ones to try... I ordered 2 cases of pears which are to be delivered in a week or so. Other than dehydrating and packing in juice, I needed something exciting. I think I'll try those as well! The jam and marmelade would be good on homemade yogurt.
Cinnamon Pear Quick Jam
4 cups chopped cored peeled fully ripe pears
1/3 cup lemon juice
7 and 1/2 cups granulated sugar
1 tsp cinnamon
1 pouch liquid pectin
Bring everything but pectin to a hard boil in a large saucepan (hard enough that it can't boil down.) Stir in pectin. Bring to a hard boil again, and boil for 1 minute. Label into jars and seal.
Ginger Pear Marmalade
3 limes
8 cups thinly sliced cored peeled firm ripe pears
4 cups granulated sugar
3 tbsp crystallized ginger
1 and 1/4 cups water
With a sharp knife, cut off peel then cut it into very thin strips. Set aside. Cut limes in half and squeeze juice into a large saucepan. Add pears and toss gently until pears are coated with lime juice. Add sugar and ginger. Stir until combined, then let stand at room temperature for 1 hour.
In a small saucepan, combine peel and water. Bring to a boil over medium heat and boil, stirring frequently, until peel is tender and most of the liquid has evaporated, about 15 minutes. Drain liquid into pear mixture; set peel aside.
Bring pear mixture to a full rolling boil over high heat, stirring frequenty. Boil hard, stirring frequently, for 15 minutes. Add peel and boil until mixture reaches gel stage, about 5 minutes. Remove frm heat and test gel. If gel stage has been reached, skim off foam. Ladle into jars and seal.
Pears Canned with Apple Juice and Cinnamon
This one's really simple. Put part or all of a cinnamon stick in the bottom of each mason jar. Heat up apple juice (the frozen canned stuff is fine) in a pan, while preparing your pears. Or make the kids do the pears, like I do.
Peel and core your pears, then pack them into the jars. Bring juice to a boil, then pour over the pears, being sure to cover the fruit but leaving an inch of headspace. Seal as normal.
I love this one because there's no added sugar, and the acidity is more than high enough! When we open a jar, we can also drink the juice.
