Nevadans?

I'd offer to take him for dinner Aubrey, but as it is I'm hoping to find someone to butcher some of mine for me. I can do it. I mean I am a chef, but I'd rather not. and at the moment i have 5 huge meaty cross roos that were supposed to be leghorn pullets. Sigh. I'm so done getting birds off the internet.
I hear ya. Im about completely over getting chicks
 
Im going to stick to arranging sales at the california poultry shows. I can usually find what i was and even though its more expensive, at least i know for a fact im getting girls!

There is a lady in our local garden club that has a 100 year old pear tree on her property and she is going to give me a box of pears. They are small, maybe 2" across the widest part. They're not strong tasting.

Do you have a good pear canning recipe? Or a pear sauce or something like that?

You can do:
-pears canned in apple juice with cinnamon (about the healthiest way you can)
-pear jam (recipe inside a box of SureJel)

-autumn cranberry pear jam
-carrot cake jam
-cinnamon pear quick jam
-ginger pear marmalade
-gingery peach pear freezer jam
-hot n' sweet chili sauce

-peppery pear salsa
-pear pickles
-spirited pears
-summer fruit cocktail
-seasoned pear almond conserve

Boy those sound good! How about ginger pear marmalade and pears canned in apple juice with cinnamon or cinnamon pear quick jam. Y'know what my problem is? You gave me too many choices!

This is an awesome book! I'm so glad I bought it this year! And thanks for the recommendations on which ones to try... I ordered 2 cases of pears which are to be delivered in a week or so. Other than dehydrating and packing in juice, I needed something exciting. I think I'll try those as well! The jam and marmelade would be good on homemade yogurt.

Cinnamon Pear Quick Jam

4 cups chopped cored peeled fully ripe pears
1/3 cup lemon juice
7 and 1/2 cups granulated sugar
1 tsp cinnamon
1 pouch liquid pectin

Bring everything but pectin to a hard boil in a large saucepan (hard enough that it can't boil down.) Stir in pectin. Bring to a hard boil again, and boil for 1 minute. Label into jars and seal.

Ginger Pear Marmalade

3 limes
8 cups thinly sliced cored peeled firm ripe pears
4 cups granulated sugar
3 tbsp crystallized ginger
1 and 1/4 cups water

With a sharp knife, cut off peel then cut it into very thin strips. Set aside. Cut limes in half and squeeze juice into a large saucepan. Add pears and toss gently until pears are coated with lime juice. Add sugar and ginger. Stir until combined, then let stand at room temperature for 1 hour.
In a small saucepan, combine peel and water. Bring to a boil over medium heat and boil, stirring frequently, until peel is tender and most of the liquid has evaporated, about 15 minutes. Drain liquid into pear mixture; set peel aside.
Bring pear mixture to a full rolling boil over high heat, stirring frequenty. Boil hard, stirring frequently, for 15 minutes. Add peel and boil until mixture reaches gel stage, about 5 minutes. Remove frm heat and test gel. If gel stage has been reached, skim off foam. Ladle into jars and seal.

Pears Canned with Apple Juice and Cinnamon

This one's really simple. Put part or all of a cinnamon stick in the bottom of each mason jar. Heat up apple juice (the frozen canned stuff is fine) in a pan, while preparing your pears. Or make the kids do the pears, like I do.

Peel and core your pears, then pack them into the jars. Bring juice to a boil, then pour over the pears, being sure to cover the fruit but leaving an inch of headspace. Seal as normal.

I love this one because there's no added sugar, and the acidity is more than high enough! When we open a jar, we can also drink the juice.

Arrgh! I was up early this morning (pre-7:00 a.m.) and opened the screen door to let in a little fresh air when what did I hear? Yep. Unmistakeable. One of my neighbors has chickens. Or, to be more exact, a rooster. It's either the folks kitty-corner across the street (outside of the HOA community) or my next-door neighbor. After all the rigamarole I went through trying to be legit keeping chickens and being denied by the HOA...sheesh & sigh. What's even more ironic is that I'll probably have the finger pointed at ME if the neighbors complain!

I can hardly wait to move.

(And, no, I'm not going to narc 'em out even though rooster-keeping is illegal in Henderson. Honestly, I thought somebody had let their hyperactive kids out at tad early in the morning to discharge until I opened the door and *really* listened)
